Easy Yummy Sourdough Bread
EASY YUMMY SOURDOUGH BREAD
500 g all-purpose flour
200 g Einkorn flour
2 cups warm water
200g active sourdough
1 tsp. dry instant yeast
1 tbsp. salt
Mix flour and water. Let stand for 30 minutes.
Mix sourdough, yeast, sugar, and salt together.
After 30 minutes mix the sourdough mixture with the flour mixture. Don’t over mix it’s best to mix by hand. Let set for 20 minutes.
Stretch the dough on a lightly floured surface. Do a stretch by folding each side into itself like an envelope. Then work the dough into a ball.
Place it in a floured banneton basket cover and place it in a warm place to rise for at least an hour.
Cover with plastic wrap, beeswax, or a plastic grocery bag and put in the refrigerator overnight.
In the morning turn out on parchment paper. Score the top and place parchment paper and dough into a cast iron dutch oven and allow to rise until double.
Set a pan of water in the oven. ( this will create steam.) Place a lid on the dutch oven and place into a cold oven and turn it on at 450 degrees. Set the timer to 40 minutes.
After 40 minutes remove the lid and continue to bake for another 20 minutes.
